Commercial refrigeration is one of the biggest energy users in a kitchen and the hardest to replace in an emergency. A short routine keeps it reliable.

Daily
- Check displayed temperatures and log them.
- Wipe spills and keep door seals clean.
- Do not overload shelves or block air flow.
Weekly
- Wash interiors with mild detergent and rinse.
- Check door seals for tears and a firm closing seal.
- Clear drain holes of debris.

Monthly
- Clean the condenser coil with a soft brush or vacuum.
- Leave at least a hand's width of space around the unit for ventilation.
- Check castors, hinges and feet.
Different units, different attention
Upright units like the 2-door upright refrigerator need clear doors and seals, while undercounter drawer units sit close to heat and grease and need regular coil cleaning. Display cabinets such as the upright cake display also need clean glass and lighting.
Warning signs
- Temperature drifts upwards
- Ice build-up inside
- Water on the floor
- Loud or unusual compressor sounds
