How to Choose a Charcoal Lift Grill for a Kebab House or Steakhouse

In a kebab house or steakhouse, the grill is the show. Guests watch the cook, smell the charcoal and judge the kitchen by what comes off the fire. A lift grill gives the cook control over that fire, and the right size and layout make service faster.

How a lift grill works

The grate sits on a lift that is raised or lowered with a handwheel through a machine-chain drive. Lowering the grate cooks hotter and faster; raising it holds meat warm or slows the cooking. The chamber is lined with firebrick for high thermal insulation, grease runs away through a concealed channel into a drawer, and an ash drawer makes cleaning easy.

Steakhouse layouts

For steaks, the elliptical Bolide has four lifts, so four steaks can be set to four heights and doneness levels at once. It adds a granite worktop, an automatic round resting rack that rotates 360°, meat-hanging rails and a sauce and spice rack. The Bolittle is the same idea with two lifts for smaller kitchens.

Stainless or painted?

Most models come in a painted version and a stainless Inox version. Both use a 430-grade stainless steel frame; the Inox models are stainless throughout, which makes them easier to keep clean in a busy kitchen.

What to prepare before you order

  • Your layout and the width you can give to the grill line.
  • How many covers you serve at peak.
  • Whether you want castors or fixed feet (both are available).
  • Your grate preference: channel, rod or square grate.

Send us your plan and we will recommend a size. You can also build a station to order: see the Vizyon kebab and steak station or the modular kebab station. Browse everything in Lift Grill Systems.

Frequently asked questions

What is a lift grill?

A grill whose grate can be raised and lowered over the coals with a handwheel or lever, so the cook controls the heat on the meat without moving the food.

Is a stainless model worth it?

Stainless steel resists corrosion and wipes clean easily, which matters near heat, grease and a busy dining room. Painted models are available when budget or colour matters.

Can the grill be made to a custom size?

Yes. Send us your layout and the number of covers you serve and we will suggest the size, or arrange a modular station.
