How to Choose a Commercial Meat Mincer: No. 12, 22, 32 or 42?

Walk into any butcher shop or central kitchen and the meat mincer is one of the machines that runs the longest. It is also easy to buy the wrong size: mincers are sold by a head number, and the number says more about the machine than most buyers expect.

What the size number means

The number refers to the head of the machine, and with it the output and motor power. From our range:

  • No. 12 – 70 mm head, about 100 kg per hour, 0.55 kW motor. A compact model for smaller businesses and households.
  • No. 22 – 82 mm head, 400 to 500 kg per hour, 1.5 kW motor. The usual choice for a busy butcher or restaurant kitchen.
  • No. 32 – 100 mm head, 600 to 750 kg per hour, 2.2 kW motor. For high-volume shops and small production.
  • No. 42 – 130 mm head, about 1,000 kg per hour, 4.0 kW motor. For production lines and large kitchens.

For still higher output, the floor-standing mincer comes in No. 42 and No. 52 sizes, reaching 1,500 to 2,000 kg per hour.

Cast-steel or chrome-steel head?

Both groups are built for daily use. The ductile cast-steel head group is the robust standard choice; the stainless chrome-steel head group suits kitchens that want the whole head in stainless steel. If you want the head to be easy to clean, choose a model with a removable barrel,, which can be taken off and refitted easily.

When a cooled mincer pays off

Meat warms up as it is forced through the plate. If you mince for long periods, or make products where the meat must stay cold, a cooled model keeps the temperature under control with an independent cooling system, automatic cooling and a digital thermostat. That helps protect the texture of the meat, and it is available in No. 22, 32 and 42.

Sinews and bones

If your cut has a lot of sinew, the sinew-removing mincer uses a three-plate, two-knife system to separate the sinews as it minces. For preparing the meat before it goes into the mincer, a countertop bone saw cuts meat and bone at a standard thickness, and for kebab shops the kebab chopper prepares meat and hummus with a timer.

Electrical details to check

  • Voltage: most models come in 220 V and 380 V (50 Hz) versions; tell us your mains supply when you order.
  • Forward / reverse operation helps clear the head when the meat jams.
  • The body and tray are stainless steel, which keeps the machine hygienic and easy to clean.
