In a busy kitchen the dish pit can quietly become the bottleneck. A clear, one-way layout from dirty to clean keeps plates, pots and cutlery moving.

Step 1: scrape
Staff clear leftovers at the dish scraping table, which keeps food waste out of the sink and the machine.
Step 2: pre-rinse
A pre-rinse spray removes stuck food before the machine. Choose a wall-mounted, deck-mounted or mixer unit depending on your sink. Read our pre-rinse buying guide for the details.
Step 3: load and wash
The dishwasher inlet table gives space to stack racks before they enter the machine.

Step 4: unload clean
The dishwasher outlet table receives clean racks so they can drain and dry without touching dirty areas.
Pots and pans
Large, heavy pots go to a pot wash unit with deep bowls and a drainboard. Finish with a pot transport trolley to move clean pots back to the line.
Layout tips
- Keep clean and dirty flows from crossing
- Place a hand-wash sink nearby, for example the knee-operated model
- Check water pressure and drain capacity before ordering
- Plan storage for clean items at the end of the line
