Commercial Kitchen Exhaust Hoods: Wall-Mounted vs Island, With or Without Filters

A good exhaust hood removes heat, grease and smoke before they spread through your kitchen. A poor one makes the kitchen hot, greasy and difficult to inspect. Here is what to consider before you order.

Wall-mounted hoods

If your cooking line runs along a wall, a wall-mounted hood is the efficient choice. The wall helps guide fumes upward, so the hood can be more compact. Choose between the wall-mounted hood with filters for greasy cooking and the version without filters for steam and heat.

Island hoods

When cooking equipment sits in the middle of the room, an island hood is required. Because air is pulled from every side, island hoods must overhang the equipment further. See the island hood with filters and the island hood without filters.

How to size a hood

  • The hood should extend past the edges of the cooking equipment on every open side.
  • Match the extraction rate to the heat load of the appliances underneath: grills and fryers need more than steamers.
  • Plan the duct route, the fan location and make-up air at the same time. Extraction without fresh air coming in will not work.

Stainless steel and cleaning

Hoods in AISI 304 stainless steel resist heat and corrosion and are easy to wipe down. Choose filters that can be removed and washed or put through a dishwasher.

Frequently asked questions

What is the difference between a wall hood and an island hood?

A wall hood is mounted against a wall and captures fumes from equipment lined up against it. An island hood hangs over a cooking line in the middle of the room and needs to be larger because air can be drawn from all four sides.

Do I need grease filters?

Most cooking lines that produce grease need filters to trap it before it reaches the duct. Hoods without filters are used for steam or heat only, for example above dishwashers.

Can hoods be made to a custom size?

Yes. Commercial hoods are normally manufactured to the exact length and depth of your cooking line.
