A commercial fryer works all day, so its heating element is under constant stress. When one fails, kitchens lose their most productive station. Knowing the element types helps you order the right part quickly.

Main fryer element types
- Straight flange elements such as the Fryer Heating Element 626 or 627, bolted into the fryer tank through a flange.
- Swivel-flange elements like 623 and 622, which can be tilted up so the tank can be cleaned.
- Pasta cooker elements such as the Pasta Cooker Heating Element 624, built for boiling water duty.
What to measure and note down
- Voltage and power (W or kW) printed on the old element
- Shape, number of loops and overall length
- Flange size and bolt pattern
- Machine brand and model

How to make elements last
- Never switch the fryer on without oil covering the element.
- Filter the oil daily and clean carbon build-up during boil-outs.
- Check the thermostat; a faulty one overheats the oil and the element.
- Replace the element gasket whenever the element is removed.
